your favorite jam for filling
Instructions
Preheat oven to 356°F (180°C).
Combine the sugar, 3 egg yolks, 1 whole egg, and the grated zest of one lemon in a large bowl. Mix well, using fork, until smooth.
Slowly pour the warm melted butter into the bowl, a little at a time, mixing with a fork until it is all incorporated.
In a separate bowl, mix the flour with the baking powder. Gradually add this dry mixture to the wet ingredients, stirring as you go until a dough begins to form.
Once all the flour is incorporated, transfer the dough from the bowl to a floured surface. Gently knead it by hand until it's smooth with no specks of flour visible.
Divide the dough into two uniform pieces. (This recipe makes enough for two tarts. Freeze any leftover dough for another tart.)
Remove a small piece from one ball of the dough. Press the larger piece of dough into a buttered and floured tart pan, using your fingertips to spread it evenly while forming a small ridge around the sides.
Spread a layer of your favorite jam over the dough. Use some of the small piece of dough to make decorative strips or shapes to place on top of the jam.
Bake in the preheated oven for 15–20 minutes, or until the crust turns golden brown.
Remove the tart from the oven and let it cool for about 10-15 minutes before slicing.
