Crostini di Pisello Verde con Prosciutto

Ingredients
- One 10-ounce bag frozen peas, cooked
- ¼ cup ricotta cheese
- 2 tablespoons extra virgin olive oil, plus more as needed
- ½ teaspoon salt, plus more for seasoning
- fresh ground black pepper
- 10 Crostini Garlic Toasts
- 4 thin slices prosciutto, cut into slivers
Instructions
- Place the cooked peas, ricotta, olive oil and salt in the bowl of a food processor fitted with the metal blade. Pulse until the peas start to disintegrate. Scrape the bowl then process for 3 – 4 minutes until the mixture is ground into a coarse purée. Adjust the seasoning with more salt and pepper. Add more olive oil to adjust as needed.
- Spoon some of the pea mixture onto each crostino mounding it slightly. Drizzle with extra virgin olive oil. Season with freshly ground black pepper. Scatter some of the slivered prosciutto on each crostino.
