Vittorio Innocenti grapes are grown on his 32-hectare estate in Montefollonico. In addition to his widely praised Vin Santo, he produces excellent examples of the Sangiovese grape out of his 13th century cellar based in the centre of the town. Made from the traditional Tuscan grapes of Sangiovese, Canaiolo Nero, and Mammolo and aged for 6 months in old oak barrels, the Rosso de Montepulciano is the little brother of Vittorio’s Vino Nobile di Montepulciano.

Ceramica Montefollonico’s studio, in a masterfully restored 13th century medieval church, is filled with her ceramics, which bring a unique touch to the traditional Italian craft. There are beautiful serving pieces, dinner plates, coffee mugs, lamps, vases, and kitchen tiles. Mariella’s style ranges from vibrant reproductions of Renaissance patterns to modern designs. There are also monochrome pieces and plates whimsically painted with wildflowers or grapevines, inspired by our Val d’Orcia surroundings. In addition, she custom-designs pieces, personalized with initials turned into elegant crests.

La Foce produces its own olive oil from trees growing on the sunny, dry slopes that overlook the valley. Varieties include leccino, maurino, frantoiano, olivastra, and pendolino. We harvest each area separately, and press the olives immediately, to guarantee low acidity and high viscosity.

Gilioli Family Balsamic Vinegar

Making balsamic vinegar is a tradition handed down from generation to generation in the Province of Modena in the Emilia Romagna region of Italy. This local oro nero (“black gold”) is aged in a series of wooden barrels in the attics of families throughout the province. Locally grown grapes, different types of wood, traditional guidelines, care and time, lots of time, all go into making traditional balsamic vinegar.
