Crostini di Broccoli di Rape

Ingredients

  • 2 tablespoons olive oil
  • 1 large clove garlic, sliced thin
  • 3 generous cups broccoli di rape, chopped into 2-inch pieces
  • salt and pepper
  • 8 Crostini Garlic Toasts
  • chunk of Parmesan cheese

Instructions

  • Heat the oil in a frying pan over medium high heat. Add the sliced garlic and cook for a minute or two until fragrant. Add the chopped broccoli di rape. Sauté, stirring frequently, for about 2 minutes. 
  • Add ½ cup water, cover and cook for 5 – 6 minutes. Remove the cover and cook until the liquid evaporates. Season with salt and pepper.
  • Divide the mixture evenly between the crostini. Using a vegetable peeler, cut slivers from the parmesan. Garnish each crostino with slivers of the cheese. Drizzle with olive oil before serving.
